Smells like the classic grassy, blackcurrant leaf flavour of a Sancerre. Tastes like steel and stones, great minerality and so clean. Super fresh wine, extremely drinkable.

Bernard Defaix is a fourth generation wine grower. In 1959 he had just two hectares; now his two sons have taken over. Didier takes care of the vineyard and Sylvain, the wines, where they farm sustainably and organically. Burgundy is the furthest north region you can take sauvignon blanc, which is reflected in this wine. Instead of tropical passionfruit and lychee, it's blackcurrant leaf and minerality.
